Urad dal vada itself is healthy, but many think that deep-frying snacks aren’t good for health. Urad dal (Black gram) is a good source of protein, fibre content, rich in iron and many things. Taking in moderation is good. Deep-fried snacks aren’t suitable for some people. Once in a while or for a special occasion, this could be considered a great snack. Addition of spinach leaves makes it more healthy.

It is advisable to use cold press oil instead of refined oil or any other oil. Use fresh oil and don’t fry in very hot oil. That makes the vada to burn the skin soon and inside would be inedible. Make sure to fry in a medium flame hot oil, and fry until the outer layer changes to golden brown colour. It should be crisp outside and soft inside. If the batter is runny. It might absorb more oil. Just add a little bit of water while making the batter.

Ingredients

  • 1 cup Urad dal
  • 1 cup Spinach leaves finely chopped
  • 1 Tbsp Black peppercorns
  • 1 Inch Ginger
  • 1 Tsp Cumin seeds
  • Salt Required level
  • 2 to 3 Tbsp Water
  • Oil To deep fry vadas

Instructions

  • Get all the ingredients ready. First soak the urad dal for 2 hours atleast.
  • Drain the water and rinse for atleast 2 times and transfer to the colander to remove any excess water.
  • Now transfer to a mixer jar or grinding jar, add ginger, pepper corns, salt and cumin. Start grinding, add 1 tbsp of water at a time.
  • Make sure to make a smooth batter. To check whether the batter is ready or not. Take a small bowl with water. Just drop a small batter, It should float and not supposed to dissolve or go down in the water. If it floats, then batter is ready to make vada.
  • Now add the chopped spinach leaves as well.
  • Mix it well. Now its time to make some yummy vadas. Add enough oil to deep fry the vadas. Make sure the oil is hot enough to fry the vada. Keep it in medium flame.
  • I always keep a bowl of water beside me to dip and wash the palm for making vada. I wash the palm and fingers with water and place a small portion of batter on my palm, slightly flatten it and make a hole in the middle and I take out with another hand slowly and gently drop it in oil carefully. I wash my hands every time and I make sure not to add more water to the batter as well.
  • Fry both sides well and remove and transfer to the plate which is lined with a kitchen towel. Once the vadas are ready, serve it with coconut chutney or sambar.

Process:
