I have been thinking about how to incorporate spinach in pasta for days. I tried in two different ways. First I tried to directly fry the spinach leaves and then mix with the pasta. That didn’t taste that well. Then I tried making a puree out of spinach leaves with some spices. It worked, It’s so creamy and it tastes a lot better.

If you are not fond of spinach, add a less quantity at first, give it a go. Then you can increase how much ever you want later. I added tomato sauce as well. That helped to balance out the bitterness from spinach and enhanced the taste of the sauce. Additionally, you can add some cheese at the end if you prefer. Let’s see how to make this pasta.

Creamy Spinach Pasta with Mushroom Recipe

Ingredients

  • 1 cup Whole Wheat Pasta
  • 50 to 100 gm Spinach
  • 100 gm Mushroom
  • 1 inch Ginger
  • 4 to 5 Garlic Cloves
  • 4 to 5 Cashew full pieces
  • 2 tbsp Tomato Sauce
  • Salt
  • 1 to 2 tbsp Oil
  • Pepper

Instructions

  • Get all the ingredients ready. First, blanch the spinach leaves. Boil the water, add some salt, once it starts boiling, then turn it off and add spinach leaves into it.
  • Let it sit for 3 to 4 mins. Then remove the spinach add it to cold water. This would help the spinach stop cooking and then strain the water and add it to the mixer jar. Additionally add some garlic cloves, ginger, and cashews as well.
  • Add a tbsp of water at a time and start making a puree out of it. Do not make it too watery.
  • Get the tomato sauce ready as well. I used store-bought tomato sauce. You can make it at home as well.
  • Now boil water in a Kadai, once it starts boiling, add 1 tsp of salt and 1 tsp of oil into that. Then add pasta as well.
  • When pasta starts to cook, it floats on top. Make it is cooked well. Do not overcook it. Once it is done, drain the water and transfer the pasta to a colander and run water through that. Rinse it well. This will help to avoid the pasta from sticking to one other.
  • Now heat the Kadai, add oil into that. Once the oil is heated, add the chopped mushrooms. Saute the mushrooms well.
  • After a min, add the spinach and tomato sauces as well.
  • Once it starts cooking, the mushroom will leave some water and everything combines and it becomes creamy.
  • When it starts to thicken, add salt and pepper. Mix well. Then toss the pasta with that creamy mushroom. Combine everything well.
  • Now, creamy spinach pasta is ready to serve. While serving add some cheese on the top if you like and enjoy.

  • Tomato sauce – 2 tbsp
  • Salt – required level
  • Oil –  1 to 2 tbsp
  • Pepper – required level

    I love adding both spinach and mushrooms to my pasta. In fact whenever I don’t have mushrooms, I get the feeling I cannot make pasta. Love how you’ve used cashew nuts to make a thick creamy sauce.
