Coriander Cauliflower Rice Recipe

Coriander Cauliflower Rice Recipe – Cauliflower is cooked with aromatic spices, coriander leaves sauce, and coconut milk. It’s a very delicious, healthy, gluten-free, and vegan recipe. First will prepare the coriander sauce or chutney, then we add all these together in the pressure cooker. It’s a one-pot meal. You can pair this with any raita. It’s a simple heavenly meal.

I have prepared cauliflower and coriander rice separately, but when I tried together, I loved it. It really goes well together. Coconut milk addition gives an extra punch to the recipe. You can also use desiccated or grated coconut and add it while grinding the coriander leaves. You can also use coconut oil to get an additional flavor or else go with natural olive oil or vegetable or sunflower oil to make it gluten-free. Let’s check out the recipe now.

Ingredients

  • 1 bunch Coriander leaves
  • 1 to 2 Green Chili
  • 5 cloves Garlic
  • 1 inch Ginger
  • 3 tbsp Coconut Milk
  • 1 Onion finely chopped
  • 1 to 2 tsp Garam Masala
  • 1 cup Cauliflower florets
  • 1 Bay leaf
  • 1 inch Cinnamon
  • 2 Cardamom
  • 2 Cloves
  • 1/2 tsp Pepper
  • 1/2 tsp Cumin powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Chili powder
  • 2 tbsp Oil
  • Salt required level

Instructions

  • Get all the ingredients ready. Now, let's blanch the cauliflower. Bring water to boil, add a little bit of salt. Once it starts boiling with bubbles. Turn off the heat. Add those florets carefully. Let it cook for 2 to 3 mins. After that, remove it, add it to ice-cold water.
  • Now, let's prepare the coriander sauce or chutney now. Chop the coriander leaves add it to the mixer jar, add green chilies, garlic and ginger as well. Add 1 or 2 tbsp of water, grind it and make a smooth paste.
  • Now, take the cooker, heat it, and add 2 tbsp of oil in it. Add the spices (pepper, bay leaf, cinnamon, cloves, and cardamom) into the cooker. Saute well.
  • Now add the chopped onions. Saute well. Now add the coriander sauce, turmeric, chili powder, and salt.
  • Add cauliflower florets and mix everything well.
  • Add cumin, coriander powder, and Garam masala as well.
  • After a few mins, add coconut milk as well.
  • Mix well and add the rice.
  • For 1 cup of rice, add 1 and 1/2 cup of water, since we added coconut milk and coriander sauce, add less water than usual.
  • Close the pressure cooker and leave it for 2 whistles. Once it is done transfer it to a bowl. Serve it with raita.

  • Salt – required level
  • Cauliflower – 1 cup of florets
  • Bay leaf – 1
  • Cinnamon – 1 inch
  • Cardamom – 2
  • Cloves – 2
  • Pepper – 1/2 tsp
  • Cumin Powder – 1/2 tsp
  • Coriander powder – 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Chili powder – 1 tsp
  • Oil – 2 tbsp

Process:
