In my home, we are a big fan of this cauliflower chili, we make it often, I wanted to make this without too much oil. Then I found this recipe, It’s so perfect for chili gobi lovers since very little oil is used. It also tastes so well like deep-fried ones.

This recipe requires two sets of batters and two times of baking. But it’s all worth it. Check out the detailed recipe below with step by step pictures.

Ingredients

  • 1 small Cauliflower

First Coat for Cauliflower

  • 3 tbsp Besan or Chickpeas flour
  • 2 to 3 tbsp Red chili powder
  • 1 tbsp Pepper powder
  • 1 tbsp Corn flour
  • 1/2 tbsp Turmeric powder
  • 3 tbsp Milk
  • 2 to 3 tbsp Water
  • 1 tbsp Oil
  • Salt

Second Coat for Cauliflower

  • 3 tbsp Tomato Sauce or Chili Sauce
  • 1 tbsp Oil
  • 1/2 tbsp Vinegar

Instructions

  •  First, clean the flower. Soak the flower in hot water for 5 mins. Then rinse and clean it.
  • Now take a mixing bowl, add all these spices, Besan or chickpea flour, chili powder, pepper powder, salt, turmeric powder, and cornflour.
  • Now add milk, oil, and water. Make a smooth batter without any lumps. The batter shouldn’t be too thick nor too thin. The consistency is very important.
  • Once the batter is ready. Now coat the flower with the batter evenly. Mix well.
  • Set aside for a few mins. Meanwhile, preheat the oven at 180 degrees for 15  mins. Once the oven is ready, Take a baking tray, line with parchment paper, place the flowers on that.
  • Bake it for about 10 to 15 mins. Once it turns crispy, take it out and cool it.
  • Now, it’s time for the second batter. Take a mixing bowl, add tomato sauce or chili sauce according to your choice. Then add oil, vinegar. Mix everything well.
  • Now coat the baked flower with this sauce batter evenly. Once it is ready, again line the flowers on the baking tray.
  • Again bake it for about 10 to 15 mins, until it is crispy. The time varies according to the oven. Once it is done. Remove it cool it down. Serve with chutney and onions.
