Incorporating vegetables in a dessert is a great way to attract kids especially. This is one attempt at that. I love cakes if it is eggless and partly a wheat flour one, I can’t say NO. First time, I tasted this cake, when one of my friends baked and got it to me. It was so yummy. After that, Whenever I have some carrots leftover in the fridge for some time, I immediately bake it. If you haven’t baked one of these goodies. Go ahead and give a try. You will not be disappointed with the outcome.

Ingredients

  • 1 cup All-purpose flour
  • 1/2 cup Whole Wheat Flour
  • 1 cup Sugar
  • 1 cup Carrot grated finely
  • 1 cup Milk
  • 1/2 cup Butter / Oil
  • 1 tbsp Vinegar
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Cinnamon Powder
  • Salt a pinch
  • Almonds and Dried Blueberries optional

Instructions

  • First, grate the carrot finely. Preferably use small holes grater.
  • Now, Mix the wet ingredients first. I used butter if you are comfortable with vegetable or olive oil. You can go ahead and use it. In case you are using butter, melt it.
  • Now add the milk to the butter. Do not use cold milk. Warm milk would help mix the other ingredients in a better way.
  • Add the sugar to the mixture. Mix it well until the sugar dissolves.
  • Now, add the vinegar and vanilla extract as well. Whisk well.
  • Once the wet ingredients are ready. Will go ahead with dry ingredients now, Meanwhile Preheat the oven for about 15 mins at 180 degrees.
  • Now take a mixing bowl, start sieving the dry ingredients like all-purpose flour, wheat flour, baking powder, baking soda, salt, and cinnamon powder.
  • Once the flour mixture is ready, start adding slowly to the wet mixture, I separated into two parts and mixed. If you try to add all flour at once, It will be difficult to mix and the cake would become soggy. Use the cut and fold method.
  • Now add the carrot and some dried blueberries (optional) also. Mix the batter without any lumps.
  • Once the batter is ready. Grease and line the baking tray. Transfer the batter and set it well.
  • If you want, you can top the batter with some chopped nuts. I used almonds. You can also use walnuts.
  • Now the preheating must be done, place the tray in the oven and bake it for about 30 mins. The timing may vary based on the oven and type. Make sure the cake is baked well before you take the cake out of the oven.
  • Once it is ready, now its time to cut and serve the delicious Eggless Carrot Cake with some cup of tea in the evening.
