One-pot Paneer and Vegetable Rice – Fried panner and fresh vegetables are cooked with some spices and rice together in electric cooker. It’s such an easy recipe, you can make it in a jiffy. It comes very handily when the guests are coming and if you want to make quick rice dish or perfect for evening pulao or for quick lunch box recipes. I added carrot, green peas, and bell peppers. You can add your choice of vegetables.

One Pot Paneer and Vegetable Rice

Fried Paneer and fresh Vegetables are cooked with rice and some spices in electric cooker. It's an easy recipe, you can prepare within 30 mins.

Equipment

Ingredients

  • 180 gms Paneer / Cottage Cheese
  • 1 tsp Cumin Seeds
  • few Cashew nuts
  • 2 pieces Cardamom
  • piece Bay leaf
  • 1/2 inch Cinnamon
  • 2 Cloves
  • 1 Onion chopped
  • 1 to 2 Green Chili sliced
  • 1/4 cup Carrot chopped
  • 1/4 cup Yellow Bellpepper chopped
  • 1/4 cup Green Bellpepper chopped
  • 1/4 cup Red Bellpepper chopped
  • 1/4 cup Green peas
  • Salt required level
  • 1/2 tsp Turmeric powder
  • 1 tsp Chili powder
  • 1 tsp Garam masala
  • 1 cup Basmati Rice
  • 3 cups Water
  • few Coriander leaves
  • 2 tbsp Oil
  • 1 tbsp Ghee Optional

Instructions

  • Get all the ingredients ready. Soak the rice for at least 20 mins before cooking.
    First, chop the paneer evenly the way you want it. Now take a Kadai, add 1 tsp of oil, fry the paneer cubes in that. Roast evenly all the sides. Once it is done, set it aside.
  • Now heat the electric cooker, add oil and ghee into that. Once it is heated, add cumin seeds, cardamom, cloves, bay leaf, cashew nuts, and cinnamon. Saute for few mins, until the aroma starts spreading.
  • Now add chopped onions and green chilies. Saute well until the color of the onion changes.
  • Next, add all the vegetables, mix well. Then add Paneer also with that.
  • After a few mins, add salt, turmeric powder, chili powder, and garam masala. If you like any other spice powders. Add those as well.
  • Now rinse the rice at least twice and add it to the vegetable mixture.
  • Add 3 cups of water. mix it well. I am using a Panasonic electric cooker, according to my measurements. I use 1 cup of rice = 3 cups of water. So check your brand and the water accordingly.
  • Close the cooker, For me, it takes 15 mins to cook. Once it is done, it automatically goes to warm mode. After a few mins, I open it.
  • Now, mix the rice carefully without breaking it and garnish with coriander leaves. Serve this hot and yummy rice with raita.
