Mushroom Fried Rice Recipe – This one is the most simple and quick recipe and it tastes awesome.

One battle which we all go through at some point is, “What to make for lunch”.. especially it should be kids friendly, veggies included, tasty and healthy. The list goes on. That’s how I came with this recipe. I usually make Mushroom rice or Biriyani with masalas and other stuffs. But this one is different.

I kind of make fried rice with all possible veggies and with simple ingredients. My main motive is not to spoil the authentic taste of veggies by adding masalas. Here I just added salt and pepper with veggies, nothing else. Believe me it tastes better than restaurant food. I am not exaggerating. When you give a try, you will understand, what I meant.

Ingredients:

  • Mushroom – 200 gms
  • Basmati rice – 1 cup
  • Oil – 2 tbsp
  • Ghee / Butter – 1 tbsp
  • Cardamom – 2
  • Cinnamon – 1 inch
  • Cloves – 2
  • Mustard and Cumin seeds – 1 tsp
  • Onion – 1 medium size (finely chopped)
  • Capsicum / Bell peppers – 1/2 (finely chopped)
  • Beans – 1/4 cup (chopped)
  • Salt – required level
  • Black Pepper powder – required level

Process:

  1. Get all the ingredients ready. First soak the basmati rice for about 20 mins. Once it is done, rinse the rice at least 2 times and drain the water. Take a pressure or electric cooker, add the rice, water (for 1 cup of rice, it’s 2 cups of water), melted ghee or butter, cardamom, cinnamon and cloves. Cook for about 10 to 15 mins. If you add more water for rice, then it will turn out soggy and sticky. Make sure to add the right amount of water.
  2. Once the rice ready, will prepare for sauteing the vegetables. Add oil in a kadai, once it is heated, add mustard and cumin seeds.
  3. Add onions and saute well.
  4. Once the onion is cooked, add other veggies like beans and capsicum. Cook for about few mins, the veggies are completely optional. You can add your own choice.
  5. After a few mins, add mushroom and saute everything well. Do not add water, since the mushroom itself leaves some water while cooking.
  6. Add salt and pepper, saute well. Adjust pepper powder according to your spice level.
  7. Once the veggies are ready, Add cooked rice and mix everything gently. Try not to break the rice.
  8. Finally garnish with coriander leaves and enjoy the yummy Mushroom Fried Rice with Raita.
