Capsicum and Garlic Fried Rice

I started liking Capsicums a lot nowadays, It’s so colorful, yummy and it’s so versatile, you can use it in many ways, for curries, Sabjis, dry fry, fried rice, tikka etc., My husband says, he finds these capsicum in most of my recipes. I guess, that’s a compliment. 🙂 This is also an easy and quick recipe. I have used only salt and pepper to make this rice, no ready made masalas are used here. You can literally feel the authentic capsicum and garlic taste in this fried rice. If you have guests coming over or you need to make something quick. This recipe would really help in that case.

Ingredients:

  1. Capsicum – 1 small size (Green, Red and Yellow)
  2. Onion – 1 medium size (finely chopped)
  3. Garlic – 1 pod (finely chopped)
  4. Mustard and Cumin seeds – 1 tsp
  5. Oil – 1 to 2 tbsp
  6. Rice – 1 cup (cooked)
  7. Bay leaf – 1
  8. Cashews – few
  9. Cardamom – 1 to 2
  10. Curry leaves, Coriander leaves – optional
  11. Cinnamon – 1 small piece
  12. Cloves – 2
  13. Salt – required level
  14. Pepper – required level.

Process:

  1. Get all the ingredients ready. Soak the Basmati rice and cook it with a bit of salt and oil.
  2. Now take a kadai, Heat oil or butter in that, Once it is heated, add mustard, cumin, bay leaf, cinnamon, cardamom, cloves and cashews.
  3. Fry for a few mins, then add garlic pieces and saute until the nice garlic aroma starts spreading.
  4. Then add chopped onions and curry leaves. Saute everything well.
  5. Once the onion is cooked well, add chopped capsicums. Mix everything well.
  6. Allow the capsicum to cook, saute occasionally.
  7. Once it starts blending, add salt and pepper. Mix everything well.
  8. Now add the cooked rice, Mix well. Once it is done, transfer it to a container, garnish with coriander or mint leaves. Yummy Garlic and Capsicum rice is ready to serve.
