This one is South Indian special. I am a big fan of Murukku.. My mom makes very yummy Rice Murukku. I can eat all the 3 times just Muruku instead of food. That much I like it.. It’s very hard for me to control.. Nowadays I learned to control my cravings. She prepares slightly in a different way. I always helped her while making. But I have never done it alone. This is my first time, to my surprise the crispness and taste came out well. So I decided to put up the beginner recipe. This is the simplest one. If you have not prepared earlier. Give it a try. It’s not a big deal.

Ingredients:

  • Rice flour – 1 cup
  • Urad dal – 1/4 cup
  • Roasted bengal gram – 1/4 cup
  • Salt – required level
  • Butter – 2 to 3 tbsp (for dough)
  • Carom seeds – 1 tsp
  • Cumin seeds – 1 tbsp
  • Red Chili powder – 1 tbsp
  • Asafoetida – a pinch
  • Oil – for deep frying
  • Water – required level

Description:

  1. Get all the ingredients ready. First roast the urad dal on a medium flame. When it starts turning slightly golden color, turn off the burner. Keep it aside to cool down.
  2. Take roasted bengal gram in a mixer jar, make a fine powder of it.
  3. Take 1 cup of rice flour.
  4. Now grind the urad dal and make a fine powder of it. Take all the flours, carom seeds, half grounded cumin seeds, asafoetida, chili powder and salt.
  5. Mix everything well. Add butter first, then water slowly and start kneading the flour. The dough shouldn’t be too sticky or stiff.
  6. There are different types of moulds available in the market. Choose your type of mould and grease with oil.
  7. Keep the dough ready. Meanwhile, heat oil in a wide pan or kadai.
  8. Press the shape of the dough on butter sheets first and then drop it in oil. Fry on a medium flame, flip the murukku and fry well on both sides. If the murukku is not fried well. It will become chewy. Do not fry for a long time or on a high flame. It will turn red soon and taste would change.
  9. Use kitchen or paper towel and drain the excess oil from Murukku. Then store the murukku in an air tight jar. Serve with tea or coffee.
