I absolutely love stuffed parathas. We can make stuffed parathas out of all possible veggies. Broccoli paratha (Spiced Broccoli stuffed with wheat flat bread) is considered as very healthy, low in fat and high in protein. People who don’t like eating broccoli directly can try this paratha. I am sure, you will love it. It’s mildly spiced. This paratha is perfect for breakfast and lunch box as well. You can pair this paratha with raita or pickle.

Ingredients:

  • Broccoli – 200 gms
  • Onion – 1 medium size (finely chopped)
  • Green Chili – 1 to 2 (finely chopped)
  • Curry leaves – few (finely chopped) – optional
  • Cumin Seeds – 1 tsp
  • Salt – required level
  • Turmeric powder – 1 tsp
  • Chili powder – 1 tsp
  • Garam Masala powder – 1 tsp
  • Dry Mango powder – 1 tsp
  • Oil – To fry parathas and 1 tbsp for making dough
  • Wheat flour – 1 cup
  • Water – to make dough

Description:

  1. Get all the ingredients ready. First make the dough. Take wheat flour, salt and 1 tsp of oil in a mixing bowl.
  2. Take lukewarm water and start kneading the flour.
  3. Add water slowly and make a smooth dough and finally coat the dough with 1 tsp oil and cover the dough with some cloth or lid.
  4. Now take broccoli, clean it and cut the florets.
  5. Boil the florets for about 10 mins.
  6. Drain the water completely and it to a blender or mixer jar.
  7. Run for about few seconds and make a coarse mixture out of it.
  8. Now heat pan, add oil and cumin seeds into that.
  9. Once it starts crackling, add chopped onions, green chilies and curry leaves. Saute for few mins.
  10. Now add coarsely grounded broccoli florets. Start sauteing everything.
  11. Add salt, chili powder, turmeric powder, dry mango powder and garam masala powder.
  12. Mix everything well and cook for about few mins. Once it is done.
  13. Transfer to a bowl. Rest for a few mins to cool down, Now take a lemon size ball from the dough and press it slightly. Keep 1 tsp of broccoli mixture in the middle of the pressed dough.
  14. Next, fold the dough well, so that the mixture won’t come out.
  15.  Now spread some dry flour and start rolling the dough with rolling pin. Do it slowly and make sure to spread the stuffing evenly.
  16. Now heat the pan, place the stuffed paratha on the hot pan, on medium flame, cook the paratha on both sides, when it is partially cooked, apply oil on that paratha. Flip the paratha and press the edges to cook well.
  17. Once it is done, stack on roti stand and serve this hot broccoli paratha with raita or pickle.

  1. Broccoli is a happy veggie in my home and we can just have it in any form. My version is different from yours and I even add grated paneer to the stuffing. Will try your version next time.

  3. Who’ll say NO this yummylicious stuffed paratha, I can have it any day. It’s great to see broccoli use in desi style. I hope you don’t mind saying this, if you prepare next time, steam the broccoli rather than boiling 🙂
