Rice and Pulao Varieties

Carrot rice or Carrot pulao is very healthy and quick recipe, which you could make in a jiffy. It’s perfect for lunch box. Whenever I get late in the morning, the quick rice recipe choice would be this. At least once in two weeks, this rice would be our lunch with other veggies. Carrots are rich in vitamin, antioxidants and boosts the immune system. It also helps to glow your skin, prevents aging and many more.

It’s a very mild spiced recipe, I added cashews and peanuts to give a crunchy texture. You can alternate the spice level according to your choice and add other nuts as well.

Ingredients:

  • Carrot – 1 cup (grated)
  • Cooked rice – 1 cup
  • Mustard seeds – 1 tsp
  • Cumin Seeds – 1 tsp
  • Chana dal – 1 tsp
  • Oil – 2 tbsp
  • Ghee – 1 to 2 tbsp
  • Bay leaf – 1
  • Cardamom – 2 to 3
  • Cinnamon – 1 inch
  • Cloves – 2 to 3
  • Cashews – 5 to 6 pieces
  • Peanuts – 6 to 8 pieces
  • Onion – 1 medium sized (finely chopped)
  • Salt – required level
  • Turmeric powder – 1 tsp
  • Chili powder – 1 tbsp
  • Curry and Coriander leaves – few

Description:

  1. Get all the ingredients ready. First soak the rice for at least 15 to 20 mins. Then cook the rice separately with a bit of oil and salt.
  2. Heat a wide pan, add oil and ghee into that, Once it is heated, add chana dal, mustard seeds and cumin seeds into that. Saute for a min.
  3. Add cashews, bay leaf, cinnamon, cloves and cardamom. Saute everything for a min.
  4. Now add peanuts as well. Saute until the peanuts get roasted. So that you will get the crunchy feeling while having the rice.
  5. Now add chopped onions and curry leaves. Mix everything well.
  6. Once the onion is cooked, add grated carrot into that mixture. Mix everything well.
  7. Add salt, turmeric and chili powder. Mix well.
  8. Once everything blends well, add the cooked rice. Mix gently.
  9. Once it is done, garnish with coriander leaves.
  10. The yummy carrot rice is ready and serve with raita.

Step by step process with picture representation:

    1. Yes. You can make out of diced carrots as well. You might need to fry the carrots for a few more mins. Grated carrot cooks easily, but diced one takes a bit more time. It would be like carrot fried rice.
