Red Cabbage Vada – Paniyaram Style recipe

I like vadas. I try those in different ways. I usually make cabbage vada like any other vada (deep frying in oil). But this time I tried to make those in Paniyaram (Paddu in Kannada and Gunta ponganalu in Telugu) Pan. To my surprise, it was not all bad. It came out well. One small lesson learned. Urad dal takes some time to cook, so it’s better to pour less amount of batter. Other than that, the taste was good like usual vada, but in different shape.

Ingredients:

  • Urad dal (Peeled Black gram) – 1 cup
  • Ginger – 1 inch
  • Black pepper – 1 tsp
  • Onion – 1 medium size (finely chopped)
  • Red Cabbage – 1/2 cup (finely chopped)
  • Curry and Coriander leaves – few (finely chopped)
  • Salt – required level
  • Oil – to fry the vadas
  • Water – 2 tbsp (to make batter)

Description:

  1. Soak Urad dal in water for about 1 hour and meanwhile, get the ingredients ready.
  2. Once the dal is soaked well, drain the water completely, add pepper and ginger. Grind coarsely.
  3. Now add a bit of water and make a smooth batter. (Careful while adding water, otherwise the batter will become too thin)
  4. Once the batter is ready, add the other chopped ingredients and salt.
  5. Mix everything well and set aside.
  6. Now heat the paniyaram pan, add a few drops of oil in all the moulds. After a few seconds, pour a half spoonful of batter in each mould. Make sure to add up to half mould, since urad dal takes time to cook if you pour full mould.
  7. Now cover and allow to cook for 1 to 2 mins, after that flip the vada and allow to cook on the other side as well. Do the same for all, until it gets cooked well.
  8. Once it is done, remove it and transfer to a plate and serve with sambar or chutney. Red Cabbage vada comes paniyaram is ready to serve.
