Kadai Mushroom Gravy Recipe

Kadai Mushroom Gravy is very popular in Indian Cuisine. This dish is prepared in Kadai, hence the name of the recipe. I have used home made spice masala to prepare this recipe, that would give you the real authentic Indian gravy taste. I have used button mushrooms here, alternatively you can use other edible mushrooms as well. Let’s go for the step by step picture illustration.

Ingredients for Spice Masala:

  • Coriander seeds – 1 tsp
  • Cumin seeds – 1 tsp
  • Cardamom – 2
  • Cloves – 2
  • Black pepper – 6 to 7
  • Cinnamon – 1 inch
  • Dry red chili – 2 to 3 (according to your spice level)

For Gravy:

  • Mushrooms – 200 gms
  • Oil – 1 tbsp
  • Ghee / Butter – 2 tbsp
  • Mustard & Cumin seeds – 1/2 tsp
  • Onion – 1 medium sized (chopped)
  • Ginger – 1 tsp
  • Garlic cloves –  5 to 6
  • Tomatoes – 2 medium sized
  • Curry leaves – few
  • Coriander leaves – few
  • Turmeric powder – 1/2 tsp
  • Chili powder – 1 tsp
  • Cashew paste – 2 tbsp
  • Salt – required level

Directions:

  1. First get the ingredients for spice masala. Take a small pan and add coriander seeds, cumin seeds, dry red chili, cloves, cinnamon, cardamom and black pepper. Dry roast them on low heat until the aroma comes.
  2. Soak 5 to 6 full cashew nuts in warm water.
  3. Once it is cool down, add it to the mixer jar and grind it to powder. To preserve the aroma, I always store it in a small container. But it is optional, anyway will use it immediately.
  4. In the same mixer jar, add onions, garlic, ginger and few curry leaves. Grind it to a paste. Keep it aside.
  5. Now add tomatoes and grind it to a paste and keep it aside.
  6. Now lets take a kadai, Heat it and add oil and ghee in it. Once it is heated, add mustard and cumin seeds.
  7. After a few seconds, add onion paste and saute well for few mins.
  8. Now add tomato paste and saute well.
  9. Once it starts to blend, add salt, prepared spice masala, turmeric and chili powder. Mix everything well.
  10. Now add mushrooms in it. Mix everything well for few mins.
  11. Now add water (1/2 – 3/4 cup) approx. Be careful mushroom will also leave water while cooking.
  12. Mix well and close the kadai and allow to cook for about 5 to 6 mins.
  13. Meanwhile, prepare the cashew paste.
  14. Now add the paste and mix well. If you like to add cream also, you can add it.
  15. At the end, add the chopped coriander leaves, stir and transfer it to a bowl.
  16. Now Kadai Mushroom gravy is ready to serve with roti, chapati and fried rices.
