Kadai Mushroom Gravy – It is very popular in Indian Cuisine. This dish is prepared in Kadai, hence the name of the recipe.

I have used homemade spice masala to prepare this recipe, that would give you the real authentic Indian gravy taste. I have used button mushrooms here, alternatively, you can use other edible mushrooms as well. Let’s go for the step by step picture illustration.

Ingredients

Ingredients for Spice Masala

  • 1 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 2 Cloves
  • 1 tsp Black Pepper
  • 1 inch Cinnamon
  • 2 to 3 Dry red chili

Ingredients for Gravy

  • 200 gm Mushrooms
  • 2 tbsp Oil
  • 1 tbsp Butter / Ghee
  • 1 tsp Mustard seeds
  • 1 1/2 Onion
  • 2 Tomatoes
  • 1/2 tsp Turmeric Powder
  • 1 to 2 tsp Chili Powder add according to your spice level
  • 1 inch Ginger
  • 5 to 6 cloves Garlic
  • 2 to 3 tbsp Coconut Milk / Cream
  • Coriander leaves, Kasthuri Methi few
  • Salt

Instructions

  • First, get the ingredients for spicy masala. Take a small pan and add coriander seeds, cumin seeds, dry red chili, cloves, cinnamon, and black pepper. Dry roast them on low heat until the aroma comes.
  • Once it is cool down, add it to the mixer jar and grind it to powder. To preserve the aroma, I always store it in a small container. But it is optional, anyway, we will use it immediately.
  • In the same mixer jar, add 1 chopped onion, garlic, and ginger. Grind it to a paste. Keep it aside. Now add tomatoes and grind it to a paste and keep it aside.
  • Now, let's take a Kadai, heat it and add oil and ghee in it. Once it is heated, add mustard seeds.
  • After a few seconds, add 1/2 chopped onions, fry it for a few mins and then onion, ginger and garlic paste and saute well for few mins.
  • Now add tomato paste and saute well.
  • Once it starts to blend, add salt, prepared spice masala, turmeric, and chili powder. Mix everything well.
  • Now add mushrooms in it. Mix everything well for few mins. Now add water (1/2 cup) approx. Be careful mushroom will also leave water while cooking.
  • Mix well and close the Kadai and allow to cook for about 5 to 6 mins.
  • Meanwhile, prepare the coconut cream or milk from freshly grated coconut. Now add the paste and mix well. If you like to add cream also, you can add it.
  • Add the chopped coriander leaves and Kasthuri methi leaves and cook for a few mins.
  • Once it is done, transfer it to a bowl. Now Kadai Mushroom gravy is ready to serve with roti or chapati.
