Moong Dal Halwa Recipe

Moong dal Halwa is a famous Indian dessert, This recipe is originally from North India. People usually make this dessert during festival time like Diwali, Navarathri and other occasions. I tried this recipe from a book called “Chef’s Special Favorite Indian Desserts“, this book was compiled by “Master Chefs of India“. I am very happy, since the result came out very well. Ingredients:

  • Moong Dal (split yellow lentils) – 1/2 cup
  • Water – 2 cups to soak and 1/4 cup to cook.
  • Milk – 1/4 cup to cook and 2 tbsp to soak saffron
  • Saffron – little
  • Butter or Ghee – 3 tbsp
  • Sugar – 1/2 cup
  • Cardamom – 4 to 5 (crushed or powdered)
  • Cashews – 10 full
  • Raisins – 10 to 15
  • Almond and pistachios – few (garnishing)

Description:

  1. First, take 1/2 cup of Moong dal using measuring cups and soak it in warm water.
  2. Soak the dal for 2 hrs minimum.
  3. Warm 2 tbsp of milk and saffron into it.
  4. Then drain the dal and rest for 20 mins, so that water will get completely drained from dal.
  5. Now grind the dal coarsely and make a paste out of it.
  6. Now heat the pan, add the ghee into it.
  7. Once the ghee is heated, add cashews and raisins. Fry in medium – low heat.
  8. Once it is done, keep it aside.
  9. Then add the moon dal paste in that ghee. Now start to saute in medium low heat, until the paste gets crumbled and cooked well.
  10. Now add the water and mix well.
  11. Then add milk and mix everything well.
  12. Then add sugar and mix the moong dal well.
  13. Cover with lid and allow to cook in low heat for 3 to 5 mins.
  14. Now add the saffron milk and mix well.
  15. Add cardamom powder also mix everything well
  16. Also add roasted cashews and raisins.
  17. Give a good mix and once it is done, transfer to a bowl. Finally garnish with almond and pistachios.

Step by step process with picture representation:

First, take 1/2 cup of Moong dal using measuring cups.

Add cardamom powder also mix everything well

Also add roasted cashews and raisins.

Give a good mix and once it is done, transfer to a bowl.

Finally garnish with almond and pistachios.
