Peanut Sundal | Verkadalai Sundal recipe for Navaratri

Navaratri is coming soon, people make different varieties of Sundal as Neivedyam for Kolu. I am planning to post some easy types of sundal recipes here. In that line, Peanut Sundal | Verkadalai Sundal recipe is the first one. It’s very easy to make and it requires only very basic ingredients. If possible use fresh peanuts. Of course peanuts are very healthy, this could be made as evening snack for Kids and adults as well.

Ingredients:

  • Peanuts / Verkadalai – 1 cup (dry)
  • Coconut grated – 3 tbsp
  • Onion – 1 medium sized finely chopped
  • Salt – required level

To Temper:

  • Oil – 2 tbsp
  • Mustard seeds – 1 tsp
  • Chana dal – 1 tsp
  • Urad dal – tsp
  • Dry red chili – 2 to 3
  • Curry leaves – few

Description:

  1. The first thing is to soak the peanuts for 1 to 2 hr. After that rinse, then drain the peanuts and pressure cook it for 3 whistles with 1 cup of water and a pinch of salt.
  2. Now drain the peanuts and set it aside to cool down.
  3. Heat the pan with oil. Add tempering stuffs like Mustard seeds, chana dal and urad dal. Saute everything well.
  4. After that add chopped onions, red chilies (seeds removed) and curry leaves. Saute until the onion color changes to golden brown.
  5. Now add the boiled peanuts and salt into that mixture. Saute well.
  6. After 2 mins, add grated coconut and mix everything well for a min and turn off the burner.
  7. Now serve this delicious peanuts as a snack or side dish in the evening.

Step by step process with picture representation:

Soak the peanuts for 1 to 2 hr.
