We (Indians) use curry leaves in almost all food items, commonly used as seasoning. It’s packed with numerous health benefits. It’s good for hair, skin, heart and fight infections. It helps to improve digestion and reduce bad cholesterol. I add this to all curries and vegetable stir fry items. People who live in a rural area, almost everyone has curry leaf tree at home. They always use fresh leaves directly plucked from the tree. My mom makes this chutney often and we love it, Since I live in the city I usually buy it from the market. But I don’t find it fresh all the time. I got a bunch of leaves from my mom’s place. They looked so fresh and I wanted to try this recipe. It came out pretty well. This would go well with different dishes like rotis, idlis, dosa, sandwiches and snack items.

Ingredients:

  • Curry leaves – 1 cup
  • Ginger – 1 inch (finely chopped)
  • Green chilies – 2 (finely chopped)
  • Mustard seeds – 1 tsp
  • Chana dal – 1 tsp
  • Urad dal – 1 tsp
  • Cumin seeds – 1 tsp
  • Salt – required level
  • Coconut – 1/2 cup grated
  • Oil – 1 tbsp

Description:

  1. Get the curry leaves, clean and rinse well. Get other ingredients also ready.
  2. Heat oil in a frying pan, add mustard seeds, chana dal, urad dal and cumin seeds.
  3. Once the mustard seeds starts crackling, add green chilies and ginger. Saute well for few mins.
  4. Now add curry leaves and salt into that and saute for few mins. Do not burn them, allow to get little crisp.
  5. Once it is done, Turn off the burner and allow it to cool down.
  6. After that add it to mixer jar and add grated coconut as well.
  7. Add water and grind all the ingredients smoothly.
  8. Transfer it to a container. Serve this chutney with dosa, idli, rotis and other snacks.
