Palak Paneer Recipe – It’s a vegetarian dish especially very famous in North India. Paneer is cooked in spinach puree with spices and cream. You can also use tofu instead of paneer if you prefer vegan curry.

People usually make this gravy for rotis, naan, parathas, and for fried rice.

What cream you can use in Palak Paneer?

The cream makes the gravy thicker. Especially coconut and cashew cream are best for palak paneer recipe.

How to retain the softness of paneer in the gravy?

When you cook the paneer for a long time, it loses its moisture and therefore it becomes hard and rubbery. If you soak the paneer in normal or warm water for 10 minutes before cooking. It will retain the softness of the paneer by adding moisture to it.

How you avoid the bitterness in the palak paneer gravy?

Spinach itself gives a bitter taste. To reduce the bitterness, we use cream in the curry. Sometimes too much stem also causes bitterness. Cut down a little bit of that too.

How you can make your Palak Puree?

Either you can blanch the palak leaves or fry them. Once the leaves are ready, you can add spices like ginger, garlic, and chilies. Grind all together and make a puree. You can also simply make a puree of spinach alone and add those spices later. It’s up to you. I personally like grinding together.

Ingredients for Spinach / Palak Puree:

  • Palak / Spinach – 200 g
  • Ginger – 1 inch
  • Garlic – 4 to 5 cloves
  • Green Chili – 1 to 2
  • Water – 2 cups to blanch
  • Salt – 1 tsp

For Palak Paneer Gravy:

  • Butter / Oil / Ghee – 2 tbsp
  • Paneer (Cottage cheese) / Tofu – 200 g
  • Cumin Seeds – 1 tsp
  • Bay leaf – 1
  • Onion – 1 medium-sized (finely chopped)
  • Tomato – 1 medium-sized (finely chopped)
  • Salt – required level
  • Turmeric & Chili powder – 1 tsp
  • Garam Masala –  1 tbsp.
  • Water – 1/2 cup
  • Methi leaves – optional for garnishing
  • Cream / Cashew paste – 1 tbsp. for garnishing and 1 tbsp for gravy.

This recipe is very popular. People usually make this gravy for rotis, naan, parathas and for some rice varieties. I have added plain paneer pieces directly while cooking, you can also slightly fry and add to the gravy. It’s up to you. Tofu cubes also go well with this recipe instead paneer cubes.

Ingredients

Ingredients for Spinach / Palak Puree

  • 200 Gm Palak / Spinach
  • 1 inch Ginger
  • 4 to 5 Garlic Cloves
  • 1 to 2 Green chili
  • 1 tsp Salt

For Palak Paneer Gravy:

  • 2 Tbsp Butter / Oil / Ghee
  • 200 Gm Paneer (Cottage cheese) / Tofu
  • 1 Tsp Cumin Seeds
  • 1 Bay leaf
  • 1 Onion medium sized (finely chopped)
  • 1 Tomato medium sized (finely chopped)
  • Salt required level
  • 1/2 & 2 Tsp Turmeric & Chili powder
  • 1 Tbsp Garam Masala
  • 1/2 Cup Water
  • Few Methi leaves Optional
  • 2 Tbsp Cream / Cashew paste

Instructions

  • Get all the ingredients ready. chop the ends of the spinach leaf stem. Rinse in running water.
  • I prefer blanching the palak leaves. Boil 2 cups of water in a wide pan, add salt into it. When it starts boiling, add spinach leaves to it. Boil for 2 mins and remove the spinach from the hot water and rinse with cold running water.
  • When the spinach is ready, Chop the green chilies, ginger and garlic cloves. Now add all four ingredients to mixer jar and make a puree out of it. No need to add water while making puree.Keep the puree aside.
  • Now heat a wide pan and add butter / oil / ghee to it. Once the butter melts, add cumin seeds into it.When the cumin seeds splutters, add a bay leaf to it. Saute it for a min,
  • Then add finely chopped onions into it. Saute for 2 mins.Then add sliced tomatoes into it and saute everything well.
  • Once the tomato starts blending, add salt, turmeric powder, chili powder and garam masala powder. Mix everything well and cook for few mins.
  • Now add the spinach / palak puree into the mixture. Stir well and add 1/2 cup of water to it.
  • After 2 mins, add the paneer cubes / tofu cubes to that mixture and stir well. Also add 1 tbsp of cream to make the gravy thicker.
  • Stir gently until everything blends well. Once it is done, transfer the gravy to a container, add the cream / cashew paste on top of it for garnishing.

Now add the spinach/palak puree into the mixture

Stir well and add 1/2 cup of water to it.

After 2 mins, add the paneer cubes/tofu cubes to that mixture and stir well. Now add 1 tbsp of cream to make the gravy thicker and it reduces the bitterness of palak.

Stir gently until everything blends well. Once it is done, transfer the gravy to a container, add the cream/cashew paste on top of it for garnishing.
