Beetroots is loaded with nutrients like iron, copper, potassium and magnesium. The beetroot is the taproot of the beet plant. The beets are usually red. This can largely be attributed to beta-lain, a pigment that beets contain. The beetroot is low in fat, decreases the risk of obesity, diabetes, and heart disease and promotes a healthy hair, energy, and overall lower weight. People consume this vegetable in different form like fry, curry, dessert and juice. Here is a simple recipe of how to make beetroot fry.

Ingredients:

  • Beetroot – 2 to 3 medium sized finely shopped
  • Onion – 1 medium sized finely chopped
  • Mustard seeds & Urad dal – 1 tsp
  • Curry leaves – few
  • Coconut – 2 tbsp (grated)
  • Oil – 2 tbsp
  • Salt – required level
  • Green Chili – 2 (finely chopped) / Paprika powder – 1 tbsp

Description:

  1. Take a wide pan, Heat Oil, add Mustard seeds and Urad dal.
  2. Saute the seeds and dal for 1 min in low or medium flame, then add onions and curry leaves into that.
  3. Saute everything well. If you are taking green chilies, add with onion and saute well.
  4. After a few mins, add chopped Beetroots as well. Mix everything well.
  5. Now add salt and paprika powder (if green chilies are not used). Saute everything well.
  6. Now cover the pan with lid and allow the beetroot to cook for some time. I don’t usually add water, I like to cook veggies dry. If you would like to add some water, add and close the lid.
  7. Occasionally stir the fry until it is properly cooked.
  8. After it is done, add grated coconut and mix everything well.
  9. Serve this fry as side dish with rice and sambar.

Step by step process with picture representation:
