Pumpkin stir fry recipe

Pumpkin is very nutritional based vegetable, rich in antioxidants, vitamins, minerals and low in calories. Pumpkin can be incorporated into meals in many different ways like soup, curry, dessert and fry. It is rich in dietary fiber and it helps to reduce cholesterol. I tried to make pumpkin stir fry. It’s very simple. It’s just like how we make other fries.

Ingredients:

  1. Pumpkin – 200 gms (finely chopped)
  2. Onion – 1 medium sized finely chopped
  3. Green Chili – 2 finely chopped
  4. Mustard Seeds, Urad dal, chana dal – 1 tbsp.
  5. Oil – 2 tbsp.
  6. Salt – required level
  7. Chili Powder – 1 tbsp.
  8. Turmeric Powder – 1 tbsp.
  9. Garlic Cloves – 2 to 3 finely chopped.
  10. Coriander leaves – Garnish

Process:

Get all the ingredients ready. First remove the skin from the pumpkin. Clean and chop it.

Take a wide pan, add oil into it. Once the Oil gets heated, add mustard seeds, urad dal and chana dal.

Roast it for 2 mins and then add chopped chilies and garlic cloves into it and saute well for 2 more mins.

After that add chopped onions into that. Saute everything well.

Add salt, turmeric powder and Chili powder into that. Mix everything well until the onion colour changes and it gets cooked well.

When onion is ready, add pumpkin pieces into that and mix well.

Add 1/2 cup of water, maybe 100 ml and close the pan. When pumpkin starts cooking, it leaves, water aside.

Leave it to cook for 15 mins. Then open the pan and stir occasionally. When it is done, the pumpkin will become very soft.

Once it is done, transfer to a container and garnish with coriander leaves. Yummy Pumpkin fry is ready to be served. This fry would give you a slight sweetness in taste.

    Pumpkins are my fav & I guess every south indian loves it! I too make them as stir fry’s instead of only using them in Sambar
