It’s a North Indian cuisine. This paratha is perfect for breakfast, dinner and for lunch box. It’s a whole wheat mixed vegetable paratha loaded with a whole lot of nutrition. The veggies are totally up to your choice. I have used Carrot, Beans, Capsicum, Potato and Broccoli. I boiled the veggies, then smashed and added it to the wheat flour to get the smooth dough.

Ingredients:

  1. Wheat flour – 2 cups
  2. Carrot – 1 medium sized
  3. Beans – 50 gms
  4. Capsicum – 1 medium sized
  5. Broccoli – 50 gms
  6. Potato – 1 medium sized.
  7. Salt – 2 tbsp
  8. Turmeric powder – 1 tbsp
  9. Chili powder – 1 tbsp
  10. Coriander powder – 1 tbsp
  11. Oil – 2 tbsp
  12. Ghee – To toast the bread

Process:

Get all the ingredients ready. Peel and rinse the vegetables.

Chop the veggies.

Steam or boil the veggies in the steamer or pressure cooker. Add 1 tbsp of salt and required amount of water to boil in that.

Transfer the boiled veggies to a separate mixing bowl and smash the veggies. Do not discard the water, we can use it to knead the dough.

Add 1 tbsp of salt, turmeric powder, chili powder and coriander powder into that and mix well.

Now add the whole wheat flour into the mixture. Add 1 tbsp of oil and start kneading the dough. Β Add the water (from boiled veggies)

Make a smooth dough and add 1 tbsp oil at the end.

Make a small ball from the dough.

Sprinkle some dry flour and roll it. Make a medium size roti out of it.

Heat the pan and place the pressed roti on it. Add some ghee or oil to toast the paratha. Flip couple of times, until the paratha gets cooked properly.

Serve this hot and yummy paratha with pickle or curd.
