Lady Finger (Okra) is known as Vendakkai in Tamil and Bhindi in Hindi. It’s very good for Diabetes and Asthma, it’s rich in Fiber, Cholesterol consumption is less in this vegetable, it helps in preventing high blood pressure, obesity, colon cancer and other digestion related problems as well. It’s good for skin and hair also.

Many people like (Kids and elders) avoid this fry in spite of the goodness it holds is because of the stickiness. Unlike other vegetables, this one sticks too much to the pan and with other spices. When I started cooking, I found really difficult to cook this vegetable until I found the proper way of making this fry.

Ingredients:

  1. Lady’s Finger – 200 gms (finely chopped)
  2. Oil – 3 tbsps
  3. Mustard seeds, urad dal and chana dal – 1 tbsp
  4. Peanuts – 8 to 10
  5. Onion – 1 medium size finely chopped
  6. Tomato – 1 medium size finely chopped
  7. Curry leaves – few
  8. Salt – required level
  9. Turmeric and Chili powder – 1 tbsp.
  10. Coconut – 1 to 2 tbsp (grated)
  11. Coriander leaves – few (garnishing)

Description:

  1. Chop the lady’s finger finely. Take a wide pan, add 1 tbsp of oil into that and add lady’s finger into that.
  2. Saute well for few mins, leave it to get cooked for some time. saute occasionally in between. Once the color changes and the stickiness is gone, Transfer the lady’s finger in a bowl and keep it aside.
  3. Take a wide pan, add oil into that, once it is heated, add mustard seeds, chana dal, cumin seeds and peanuts into that. Saute well for few mins.
  4. Add onions and curry leaves into that. Saute everything together.
  5. Once the onion is cooked, add chopped tomatoes also into that, mix everything well.
  6. When tomato blends well, add salt, turmeric and chili powder. Mix well.
  7. At the end add grated coconut and mix gently. Turn off the burner.
  8. Transfer the fry to a bowl and garnish with coriander leaves.
  9. Yummy Lady’s finger stir fry is ready to serve.

Step by step process with picture illustration:
