Meal Maker or Soya Chunks Gravy is a perfect side dish for rice, chapati, roti or any variety of fried rice.
Soya chunks are made from soybeans, There are different forms, regular chunks, mini chunks, and granules. Vegan people should go for this since it’s an alternative for meat. It contains high protein whereas amino acids are the building blocks that create protein. It especially helps women, it reduces the risk of osteoporosis in menopausal women, Soya chunks contain a high amount of carbs. The recommended intake of carbs for the average adult is 130 grams. 100 grams of Soya chunk contains 30 grams of carbs. Soya is high in fiber, which is known to benefit cholesterol levels.

- Soya chunks – 1 cup
- Onion – 2 medium-sized (finely chopped)
- Tomatoes – 1 medium-sized
- Green Chilies – 1 to 2
- Cashews – 5 to 6 full pieces
- Fennel Seeds and Poppy seeds – 1 tsp
- Mustard and cumin seeds – 1 tbsp.
- Oil – 2 tbsp
- Ghee – 1 tbsp (optional)
- Ginger – 1 inch
- Garlic – 3 to 4 cloves
- salt – required level
- Chili powder, Turmeric powder – 1 tbsp.
- Garam masala – 2 tbsp.
- Coriander powder – 1 tsp
- Water – 1 cup.
- Curry and Coriander leave – few.
Get the ingredients ready. Heat the Kadai, Add oil 1 tbsp into that, once the oil is heated. Add 1 chopped onion and green chilies into that, saute well.
After a min, add chopped tomatoes into that and saute well.
Once the onion and tomato blend together, now add the cashews and saute everything well for a min and switch off the flame.
Let it cool down for a few mins, then add everything to a mixer jar, add 1 tsp of garam masala, coriander powder, poppy seeds, and fennel seeds. Add 2 to 3 tbsp of water and grind everything well.
Add 1 cup of Soya chunks in 2 cups of boiling water, add a bit of salt. Let it boil for 5 mins. Once it becomes big and soft, drain the hot water and rinse the chunks with cold water for 3 to 4 times and keep it aside.
Now heat the pan. Add oil into that, once it gets heated, add mustard and cumin seeds. After few seconds, add chopped onions and curry leaves into that. Saute well for few mins.
Add ground masala paste also into that, saute well until the raw smell goes away.
After that add 1 cup of water, salt, turmeric, and chili powder. Give a good mix.
After 5 minutes, add 1 tbsp of garam masala and soya chunks also into that, if the chunks are too big, chop into two pieces before adding. Mix everything well and stir it for a few minutes.
Now add kasthuri methi leaves and mix everything well. Close the lid and allow it to cook for 10 mins or until you get the nice thick gravy.
Once it is done, transfer into a bowl and garnish with coriander leaves.
