Okra Kurkure– Tasty and crispy side dish for sambhar rice or rasam rice. You can prepare this fry either in a pan or oven. The main thing you need to consider here is patience, it takes time to get that perfect crispness in the oven.

Some people deep fry the okra’s to get the crispness. But I recommend baking or pan fry. Since you don’t need to add much oil over here. I have shown a baked version here. Make sure you have the right amount of oil and it is already heated up well in case you are doing pan-fry, otherwise the bhindi absorbs oil too much and it becomes soggy.

Ingredients
- 250 gms Bhindi / Okra / Lady's Finger / Vendaikkai
- 1 tsp Chili powder
- 1/2 tsp Turmeric powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1 tsp Garam Masala powder
- 1/2 cup Besan / Gram Flour
- Salt as required
- Oil as required
Instructions
- Rinse the vegetable 2 to 3 times, slice the okra vertically into 2 to 4 pieces. Completely dry it on the napkin or cloth.
- Now get the spices in the bowl. Turmeric powder, Chili powder, Coriander powder, Cumin powder, Garam Masala powder, and Salt.
- Now add Besan or Gram flour also into that. Mix well.
- Now sprinkle the spice mixture on okra.
- Mix everything well. Marinate the Bhindi mixture for about 20 - 30 mins.
- Once it is ready, Preheat the oven for 15 mins at 180 degrees. Spread the marinated bhindi mixture on the greased or lined tray. Brush some oil if you want and start baking until it becomes crispy.
- Serve the crispy bhindi immediately for better taste.
